If you’re here, you are most likely a parent or caregiver for an egg-allergy kiddo.


You’ve come to right place!


Here I will share with you my weekly meal-prep menu, links to products used (yes, I am an affiliate, yes, I use every product I share in this eggless meal blog). 


My meal-prep menus are typically convenient and not every meal will be “healthy” – they will usually be edible though- maybe- depends on which child you ask! 😉

Meal-Prep Menu Process

Let’s start by talking about how I come up with my meal-prep menu and how I determine how many different larger meals to make.

1) How many individual meals do I need?

              For our family, our meal count looks like this:

Child 1 (egg allergy kiddo):

Breakfast -7

Lunch-7

Dinner 7


Child 2:

Breakfast-2

Lunch-2

Dinner-7

-> He attends daycare and school and is served breakfast and lunch there – I promise, I’m not starving this one 😊


Husband:

Breakfast-7

Lunch-7

Dinner-7


Myself:

Lunch-7

Dinner-7

->I don’t typically eat breakfast...don’t come after me. I snack healthy at 10am!


So......

Our typical individual meal count is as follows:

Breakfast: 16

Lunch: 23

Dinner: 32

*Note – it always ends up that not everyone packs their lunch or eats at home every night of the week. I will typically round down – knowing that if I need a last minute meal, I will have pasta or sandwich meat on hand.

 

2) Breakfast:

With needing 15 individual portions for breakfast, I try to include three breakfast options and make five of each.


3) Lunch:

Rounding down to 20 meals, I usually select three options and make 6-7 of each.

 

4) Dinner:

Rounding down to 28, as dinner seems to be the meal we “eat out” or eat elsewhere most often.   I will usually select four options and make 7 of each.

This week’s Menu

My husband is gone this week for training and traveling so our number of meals dropped significantly!


Here is what we opted for this week:


Breakfast

Bagels, Cheese, Grapes 

Yogurt with granola and fresh fruit

Peanut butter toast with apples

 

Lunch

Pasta Salad

Pizza 

 

Dinner

Breaded chicken with diced potatoes 

Steak bites with broccoli and cheese 

 

Prepped Snacks

Baby carrots

Celery sticks

Cucumber spears

Homemade ranch

Grapes

Cheese cubes

Price Breakdown

The following price breakdown is based on the assumption that you need all the listed ingredients. Of course you may have a few of the items on hand, or may be able to use some items for multiple weeks (ex. Granola, peanut butter etc.). 


·        Bagels (pack of 6) $4.18

·        Great Value Greek Yogurt (32 oz) $3.54

·        Granola (11oz) $4.38

·        Blueberries (11oz) $3.98

  • Red Baron 4-Cheese $4.77

  • Sam’s Choice Three Meat $5.98

·        Breaded Chicken w/ Diced potatoes (5 servings)

  • Panko Italian bread crumbs $1.77

  • Thin sliced Chicken breasts (approx. 2lbs) $8.82

  • Apple sauce (8oz) $2.77 --à Use this to coat your chicken instead of egg!

  • Golden potatoes (2lbs) $4.68

  • Salt to taste


·        Steak bites with broccoli and cheese (4 servings)

  • 4 angus sirloins (approx. 1lb) $11.90

  • Avacado oil (1 TBS) $8.24

  • Minced garlic (2 tsp) $2.16

  • Green Giant simply steam Broccoli & Cheese (2 bags) $4.16

Remember that this cost is based on the idea that you had to buy every single item on the list. Your cost may be even less! (NOTE: this does not account for routine weekly items like bread, milk, juice etc.)
